Kale Energy Salad for Thyroid

Ingredients:

  • 1 bunch of chopped kale
  • 1 avocado, cut into cubes
  • 1 teaspoon celtic sea salt
  • 2 teaspoon honey
  • 1 1/2 lemon juice
  • 1/2-1 tablespoon kelp flakes
  • 1/4 cup raisins (optional)
  • 1/4 cup peeled carrot
  • 1/4 cup tahini
  • 1/4 cup roasted sunflower seeds
  • 1/4 cup olive oil
  • 1/4 cup water

Instructions:

  1. Combine the honey, olive oil, lemon, tahini and salt, until it is blended.
  2. Pour the tahini dressing over kale, carrots and kelp flakes. Leave it for at least an hour. Then put the avocado, raisins and sunflower seeds.

Note:

The salad can be refrigerated overnight. The kale will become softer and break down from the lemon juice the longer it marinates.
